Chopped Thai Chicken Salad



This simple chopped Thai chicken salad has BIG flavors - peanut, lime, soy, chili, cilantro. Topped with a homemade peanut dressing! Healthy and fresh.

Ingredients

3 cups Chicken, cooked

1 Carrots, large
1 cup Cilantro, fresh
1 clove Garlic, fresh
1 small knob Ginger, fresh
1 head Green cabbage
1/2 cup Green onions
1 Papaya or mango, green
1/2 cup Peanuts
3 Serrano peppers, red
Condiments
1/2 cup Peanut butter
1 Salt and lime juice
1/3 cup Soy sauce, low sodium
Baking & spices
2 tbsp Chili paste
2 tbsp Sugar
Oils & vinegars
1/4 cup Rice vinegar
1/3 cup Sesame oil, toasted or dark
Liquids
1/4 cup Water to thin to desired consistency
